Grilled Salmon with Savory Grilled Peach Coleslaw -- Taken from www.bsmith.com:
Prep Time: 15 minutes; Cook Time: 15 minutes (4 servings)
Ingredients:
1/2 cup Lawry's Lemon Pepper Marinade with Lemon Juice
4 salmon fillets (5 oz. ea.)
1/3 cup Hellmann's or Best Foods� Real Mayonnaise
1/4 cup sour cream
1/3 cup chopped red onion
1 Tbsp. sugar
1 Tbsp. lime or lemon juice
1/2 tsp. Lawry's Seasoned Salt
1/4 tsp. Lawry's Seasoned Pepper
1 package (16 oz.) coleslaw mix
1/2 cup dried cranberries
2 firm, ripe peaches, halved and pitted
Instructions:
Pour 1/2 cup Marinade with Lemon Juice over fillets in a large non-aluminum baking dish or plastic bag and turn to coat. Cover, or close bag, and marinate in refrigerator about 30 minutes.
In large bowl, combine Mayonnaise, sour cream, onion, sugar, lime juice, Lawry's� Seasoned Salt and Seasoned Pepper. Add coleslaw mix and cranberries; toss to coat, then set aside.
Grill or broil peaches, turning once, 8 minutes or until browned. Cool, then dice. Gently stir into coleslaw; set aside.
Remove fillets from Marinade, discarding Marinade. Grill or broil fillets, turning once, 8 minutes or until fish flakes with a fork. Serve with coleslaw.
